Puneri cotton is a classic weave of Maharashtra which owes its fame to silk and cotton weaving which flourished in the early 19th century. This weave is said to have travelled from Karnataka and Andhra Pradesh during the Peshwa regime and was the fabric used by the Royal women. The warp and the weft in the weave are 100%cotton with metallic embellishments on the border. Featured here is a 1995 rani pink handloom treasure paired with a Maharashtrian delicacy the, “kothimbir Vadi”. The beauty of this saree is enhanced by an unusual combination of a dark maroon border on which sits the coriander-loaded crisp besan squares.

Ingredients for Kothimbir Vadi:

  • Besan/ Bengal gram flour 1 cup
  • Water 2 cups
  • Finely chopped coriander 1 cup
  • Turmeric powder 1 tsp
  • Green chilly finely chopped 1 tsp
  • Ginger finely chopped 1 tsp
  • Red chilly powder 1 tsp
  • Garam masala 1 tsp
  • Sesame seeds 1tsp
  • Asafoetida 1 tsp
  • Oil for tempering 1tsp
  • Oil for frying
  • Salt as required

Preparation Method:

  • Make a besan thick slurry with water.
  • Add the required salt. Set aside.
  • Take a heavy-bottomed pan.
  • Add oil. When the oil is hot add the sesame, asafoetida followed by the green chilly and ginger. Saute.
  • Add the coriander leaves and saute along with all the spice powders.
  • Simmer the flame.
  • Add the besan slurry slowly with constant stirring.

  • Keep stirring till it becomes a thick mass.

  • Pour on a greased plate and level it. Allow it to cool.

  • Cut into squares and deep fry till golden
